  • Whole Wheat Bran Muffins

    Ingredients

    • 1 c. all purpose flour
    • 1 1/2 c. all bran cereal
    • 1 1/2 teaspoon artificial sweetener
    • 1 egg white, lg. or possibly med. (or possibly 2 small)
    • 1 c. whole wheat flour
    • 1 teaspoon baking pwdr
    • 1 1/2 c. skim lowfat milk
    • 1 tbsp. corn oil

    Directions

    1. Slightly beat egg white with fork. Add in lowfat milk, corn oil, and sweetener to egg white. Mix well. Measure flour, whole wheat flour, cereal, salt, and baking pwdr into large bowl. Mix well. Pour lowfat milk mix into dry ingredients, mix with a fork do not over mix. Spray a 10 muffin pan with "Pam". Pour batter into 10 muffin pan. Bake at 375 degrees for 20 min. Yield 10 muffins. A good recipe for "dieting".
