    Whole Wheat Banana Chocolate Mini Muffins

    These are my kids' favorite! Made with whole wheat flour, sucanat, and only egg whites, they are a healthier alternative to "regular" muffins, but just as good. Great for a sweet treat in the lunch box!

    Ingredients

    • 1 2/3 cup whole wheat flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1 teaspoon cinnamon
    • 1/4 cup unsweetened cocoa
    • 1/4 teaspoon sea salt
    • 3 egg whites
    • 1/4 cup sucanat
    • 1/4 cup canola oil
    • 1/4 cup milk (soy, cow, almond...)
    • 2 teaspoons vanilla
    • 2 medium bananas, very ripe, mashed
    • 1/4 cup mini chocolate chips

    Directions

    1. Preheat oven to 375°F. Spray mini muffin pan with olive oil cooking spray.
    2. Combine dry ingredients (flour, baking powder, baking soda, cinnamon, cocoa, and salt). Stir until well mixed.
    3. In separate bowl, combine egg whites and sucanat until sucanat is dissolved. Add oil, milk, vanilla and bananas. Stir to combine.
    4. Add wet ingredients to dry ingredients and stir until just combined.
    5. Mix in chocolate chips.
    6. Fill muffin cups 2/3 full and bake for 10 minutes. Remove from pan and cool on cooling rack.
