Whole Wheat Banana Bread
Ingredients
- 1 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1 1/4 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/8 tsp. sea salt
- 2 egg whites
- 2 medium mashed bananas
- 3/4 cup sucanat
- 2 Tbsp. coconut oil, melted
- 2 Tbsp. unsweetened apple sauce
- 1tsp. vanilla
Directions
- Preheat oven to 350°F. Spray loaf pan with non-stick cooking spray.
- In medium bowl, combine flour, baking powder, baking soda, cinnamon, and salt. Set aside.
- In large bowl, combine egg whites and sucanat and stir until sucanat is dissolved. Add bananas, coconut oil, apple sauce, and vanilla and stir with wire whisk until mixed well.
- Add dry ingredients to wet ingredients and stir until flour mixture is moistened. Do not overstir.
- Pour batter into pan and bake at 350°F for 45 - 50 minutes. When toothpick inserted into center of bread comes out clean, bread is done.
- Cool in pan set on wire rack for 10 minutes. Remove bread from pan and cool completely on wire rack.
