  • Whole Wheat Banana Bread

    Ingredients

    • 1 cup whole wheat flour
    • 1/2 cup all-purpose flour
    • 1 1/4 tsp. baking powder
    • 1/2 tsp. baking soda
    • 1 tsp. ground cinnamon
    • 1/8 tsp. sea salt
    • 2 egg whites
    • 2 medium mashed bananas
    • 3/4 cup sucanat
    • 2 Tbsp. coconut oil, melted
    • 2 Tbsp. unsweetened apple sauce
    • 1tsp. vanilla

    Directions

    1. Preheat oven to 350°F. Spray loaf pan with non-stick cooking spray.
    2. In medium bowl, combine flour, baking powder, baking soda, cinnamon, and salt. Set aside.
    3. In large bowl, combine egg whites and sucanat and stir until sucanat is dissolved. Add bananas, coconut oil, apple sauce, and vanilla and stir with wire whisk until mixed well.
    4. Add dry ingredients to wet ingredients and stir until flour mixture is moistened. Do not overstir.
    5. Pour batter into pan and bake at 350°F for 45 - 50 minutes. When toothpick inserted into center of bread comes out clean, bread is done.
    6. Cool in pan set on wire rack for 10 minutes. Remove bread from pan and cool completely on wire rack.
