    love a chicken salad sandwich and there are as many variations as there are cooks. I usually make a pretty standard chicken salad recipe, you know the one, chicken, celery, sometimes grapes, pecans, a favorite of mine for sure, but I wanted to do something different using what I had on hand. The light bulb went on (can you see it over my head) when I saw the apples in my crisper. I immediately thought of the Waldorf salad my mother would always make for special occasions. I loved the crunchy sweet apples and the nutty taste of walnuts together and since I know chicken tastes amazing with grapes I thought it might just take the Waldorf salad to a new level and I was right. This is a wonderful way to make a chicken salad to put on your favorite type of bread, croissant or even resting on a bed of lettuce leaves. Dig in and enjoy!

    Ingredients

    • 1 cup chicken, cooked and chopped into chunks
    • 1/2 cup apples, chopped with peeling left on
    • 1/4 cup celery, chopped
    • 1 tablespoon walnuts, chopped
    • 1/4 cup mayonnaise
    • 1 tablespoon milk
    • 1 teaspoon sugar

    Directions

    1. Combine chicken, apples, celery and walnuts in a bowl. In a separate bowl mix together mayonnaise, milk and sugar. Stir to mix well. Pour over the chicken mixture. Stir to combine. Place in refrigerator and chill for approximately 30 minutes before serving. Makes 4 servings.
