"Vergetarian" Diane

We thought it clever enough that we decided to name this dish after her...well, the "vergetarian" part anyway. Ingredients
- 1 pkg. (8 0z.) cubed seitan, cut into slices
- 2 tsp. lemon pepper
- 1/4 cup vegetable broth
- 2 Tbsp. Earth Balance or other vegetable "margarine"
- 6 tsp. lemon juice
- 1 Tbsp. Vegan Worcestershire sauce
- 1 tsp. Dijon mustard
- 1 Tbsp. fresh minced parsley
Directions
- Sprinkle each slice of seitan with lemon pepper.
- Heat Earth Balance in medium skillet and cook seitan for
- 3 to 4 minutes; flip slices and continue to cook for another 3 minutes.
- Remove to a platter and keep warm.
- Add broth, lemon juice, Worcestershire sauce and mustard to skillet.
- Cook, stirring until heated through. Pour over seitan and garnish with parsley.
