Ingredients
- 20 qts water
- 1/4 cup salt
- 108 pounds Vegetables, frozen medley
Directions
- Bring water to a boil in a steam-jacketed kettle or stock pot.
- Add salt.
- Add mixed vegetables; stir well. Return to a boil; cover.
- Reduce heat; cook mixed vegetables 7 minutes.
- CCP: Heat to 145 F. or higher for 15 seconds.
- Place mixed vegetables in serving pan.
- CCP: Hold for service at 140 F. or higher
