  • Vegetable Lasagna Curls

    Ingredients

    • 12 lasagna noodles
    • 1 pound low fat cottage cheese
    • 1-2 c. (1 bunch) broccoli flowerets
    • 1 c. minced fresh mushrooms
    • 2 green onions, minced
    • 1 teaspoon basil
    • 1 teaspoon oregano
    • 2 tbsp. fresh parsley, minced
    • 2 c. Hunts spaghetti sauce
    • 2 tbsp. Parmesan cheese

    Directions

    1. Preheat oven to 375 degrees. Cook lasagna noodles 8 to 10 min till tender but hard. Drain, rinse, keep in cool water till needed.
    2. Mix remaining ingredients except sauce and cheese in a small bowl. Place about 1/4 c. of mix on each noodle. Roll up noodle to enclose filling. Spray baking pan with non-stick spray. Place rolls seam side down.
    3. Cover with spaghetti sauce and sprinkle with cheese. Bake 20 min, covered. Remove cover and bake 20 min more. Makes 6 servings.
