Vegan Coconut Creme Glaze
This is the easiest "frosting" I know how to make. It is low sugar, and delicious. Some may want to thicken it with arrowroot or flour, but I like it just how it is. NICE. And GOOEY. Ingredients
- 1 can full fat coconut milk (refrigerated overnight)
- 1 tsp vanilla extract
- Agave nectar, maple sugar, or coconut palm sugar to taste
Directions
- Open can of coconut milk carefully--don't shake.
- Scoop off the white part from the top and place it into a deep bowl.
- Add vanilla and sweetener.
- Whisk until the milk thickens and becomes fluffy--around 15 minutes or so depending on the speed and quality of your electric mixer.
- Frosts 12+ cupcakes.
