  • Vegan Coconut Creme Glaze

    This is the easiest "frosting" I know how to make. It is low sugar, and delicious. Some may want to thicken it with arrowroot or flour, but I like it just how it is. NICE. And GOOEY.

    Ingredients

    • 1 can full fat coconut milk (refrigerated overnight)
    • 1 tsp vanilla extract
    • Agave nectar, maple sugar, or coconut palm sugar to taste

    Directions

    1. Open can of coconut milk carefully--don't shake.
    2. Scoop off the white part from the top and place it into a deep bowl.
    3. Add vanilla and sweetener.
    4. Whisk until the milk thickens and becomes fluffy--around 15 minutes or so depending on the speed and quality of your electric mixer.
    5. Frosts 12+ cupcakes.
