    Biscuits are made with ground almonds, are light and crisp, low in saturated fat and gluten-not to mention Vegan!.

    Ingredients

    • 1/2 tsp-baking soda
    • ⅓ cup-Sugar
    • ⅛ tsp-Salt
    • 4 Tbsp-Rice bran oil
    • ⅓ cup-Ground almonds
    • 0.667 cup-Rice flour, (White rice flour not brown rice flour.)
    • ⅓ cup-Cocoa powder
    • ½ tsp-Baking powder

    Directions

    1. Preheat oven to 190 degrees C. Line a biscuit tray with baking paper.
    2. Beat together oil, sugar and salt until thick and pale.
    3. Add the ground almonds, white rice flour, cocoa and baking powder. Mix to combine. The mixture may be slightly sticky but should roll easily.
    4. Roll the mixture into 3 mm and cut into shape if desired.Place on the lined baking tray.
    5. Bake for 15 minutes. The biscuits will develop thin cracks on top as they bake.
    6. Note:I cut these into heart shapes...but you could just roll teaspoonfuls of the mixture into balls and place on the lined baking tray. Using a fork or the bottom of a glass, flatten the biscuits to about 3 mm.
    7. Also I made some plain and some saffron mixed biscuits too omitting the cocoa powder.They both tasted really good.
