Vanilla Tofu Cake with Maple Marshmallow Frosting
DELICIOUS Ingredients
- Cake:
- 1 3/4 cup flour
- 1 1/2 t. baking powder
- 1 1/2 t. baking soda
- 1/4 t. salt
- 1 T. vanilla extract
- 1 13 ounce box soft tofu
- 1 1/4 cup sugar free maple syrup
- 2 T. vegetable oil
- 1 cup skim milk
- 1/3 cup boiling water
- Frosting:
- 1/2 cup sugar
- 1/4 cup water
- 1 large egg white
- 1/8 teaspoon cream of tartar
- 1/4 tsp pure maple extract
Directions
- Cake:
- Sift and combine flour, cocoa powder, baking powder and soda, and salt
- Process tofu in a food processor
- Add oil and syrup and process
- Add the tofu combination to the dry ingredients until combine
- Add the boiling water until just combined
- Pour evenly into the two cake pans and bake for 30-40 minutes or until the knife comes out clean
- Cool for 20 mins in pans on wire rack
- Then cool out of pan on wire rack until completely cool
- Frosting:
- Combine sugar and water in a small, heavy saucepan over medium-high heat. Stir constantly for 3 minutes or until sugar dissolves.
