  • Vanilla Tofu Cake with Maple Marshmallow Frosting

    Ingredients

    • Cake:
    • 1 3/4 cup flour
    • 1 1/2 t. baking powder
    • 1 1/2 t. baking soda
    • 1/4 t. salt
    • 1 T. vanilla extract
    • 1 13 ounce box soft tofu
    • 1 1/4 cup sugar free maple syrup
    • 2 T. vegetable oil
    • 1 cup skim milk
    • 1/3 cup boiling water
    • Frosting:
    • 1/2 cup sugar
    • 1/4 cup water
    • 1 large egg white
    • 1/8 teaspoon cream of tartar
    • 1/4 tsp pure maple extract

    Directions

    1. Cake:
    2. Sift and combine flour, cocoa powder, baking powder and soda, and salt
    3. Process tofu in a food processor
    4. Add oil and syrup and process
    5. Add the tofu combination to the dry ingredients until combine
    6. Add the boiling water until just combined
    7. Pour evenly into the two cake pans and bake for 30-40 minutes or until the knife comes out clean
    8. Cool for 20 mins in pans on wire rack
    9. Then cool out of pan on wire rack until completely cool
    10. Frosting:
    11. Combine sugar and water in a small, heavy saucepan over medium-high heat. Stir constantly for 3 minutes or until sugar dissolves.
