  • Twice Baked Potato Salad

    This is a recipe a friend of mine gave me many years ago although i haven't made it in a while it is really good. My friend moved to Michigan and we lost contact.

    Ingredients

    • 6-8 medium sized potatoes
    • 16 oz tub sour cream
    • 1 stick of butter
    • 2 pkg bacon bits
    • 1 bunch green onions cut in 1/4 inch sections
    • 1 pkg shredded Colby and Jack cheese
    • 1 tsp salt
    • 1 tsp black pepper (optional)

    Directions

    1. peel potatoes and cut into bite size cubes
    2. Fill medium to large pan with enough water to cover potatoes
    3. put potatoes in pan
    4. cook over medium heat until tender
    5. drain potatoes
    6. in a large bowl first combine butter and sour cream
    7. mix well with a spoon
    8. add bacon bits, green onion, cheese, salt and pepper
    9. mix again with a spoon
    10. refrigerate for 1 hour before serving or serve hot
