    This is one of the simplest and best steak preparations you will EVER make. I've been trying for years to find the perfect grilling recipe to bring out the natural flavors of a great steak without over powering them. This recipe rivals the best steakhouses out there. You must buy prime steaks (I got mine from Costco). I adopted this from the Barbecue Bible, but took some liberties. My guests absolutely raved!

    Ingredients

    • 2-2 /12 pounds good steak -- 1 large T-bone, Porterhouse, or 2-3 Rib-eye steaks (I like bone-in),
    • Kosher or Sea Salt and freshly ground pepper (white pepper preferred, but not required)
    • 1/3 cup of the best extra virgin olive oil you have

    Directions

    1. Preheat the grill to high. Keep covered and try to get up to 500 F. Using wood or charcoal is ideal (but I usually don't),
    2. While grill is pre-heating, wash and the steaks dry, then liberally season them with coarse salt and ground pepper on both sides. Spray the side that is going down first on the grill with an olive oil spray.
    3. Make sure the grills are glowing and put the steaks down. Cook the steaks about 6 minutes per side with the grill closed for medium rare. (My grill flares if I keep it open, so I close it. Either way is fine.) Salt and pepper liberally, and spray with additional olive oil, when you turn it.
    4. Remove to a deep serving platter. Salt and pepper one last time. Drizzle the olive oil over the steakand let stand for 3-5 minutes before serving.
    5. Cut servings off the bone for each guest. Mix the oil and juices that collect at the bottom of the serving dish and and spoon it over the steak you serve. Make sure you keep the bone for yourself. open a nice bottle of Barolo, and get ready for one of the world's best steaks!
