TURKEY TACO SALAD 3SP
Each salad bowl (with romaine salad, 1 cup of turkey mixture, 2 crushed tortilla chips, and 1 tablespoon cheese) is just 3 smart points per serving. Ingredients
- 1 lb. 99% fat-free ground turkey
- 1 medium sweet red pepper, chopped
- 1 medium sweet yellow pepper, chopped
- ⅓ c. chopped onion
- 1½ c. salsa
- 2 tsp. chili powder
- 1 tsp. ground cumin
- 5-8 cups torn romaine
- 10 tortilla chips
- 5 tbsp. shredded cheddar cheese
Directions
- In a large skillet, cook turkey, peppers, onion and garlic over medium heat about 6-8 minutes or until turkey is no longer pink and vegetables are tender, breaking up turkey into crumbles.
- Stir in salsa, chili powder and cumin; heat through. Divide romaine among five plates. Top with 1 cup of turkey mixture.
- Crush 2 tortilla chips over each bowl and sprinkle with 1 tablespoon cheese.
