Turkey Sausage and Spicy White Beans
Prep: 5 min Cook: 30 min Servings: 4by trisha brooke6 recipes>An adaptation of a recipe I tried from Debi Mazar's TV show, Extra Virgin. I like my version better. I'm sure another type of sausage would work as well but I have not tried another. Ingredients
- 8 turkey sausages
- 3 tbsp. olive oil
- 3 cans cannellini beans, drained and rinsed
- 1 medium onion, diced
- 3-4 cloves garlic, minced
- 1 lb. cherry tomatoes, quartered
- 2 handsful of parsley, chopped
- 1 tsp. (or more if spicier is desirable) red pepper flakes
- 3 bay leaves
- 1/2 cup dry red wine
- salt & pepper
Directions
- Brown sausages in medium-sized heavy pot over med./high heat in olive oil. When well browned, remove from pot and set aside.
- Add onions and garlic and cook gently till soft and beginning to brown. Add remaing ingredients.
- Raise heat to high until boiling then reduce heat to low. Allow sauce to cook until slightly thickened.
- Return sausages to pot, cover, and cook over low heat for 15-20 minutes.
- Garnish with additional chopped parsley right before serving.
