    Another great Sunday Brunch favorite or it would make a great appetizer for Game Night. Just thinly slice the potatoes, steam them in the microwave and line a muffin tin. Follow remaining instructions.

    Ingredients

    • 4 Baking Potatoes, Baked & Slightly Cooled
    • 4 Large Eggs
    • 8 Slices Turkey Bacon, Cooked & Crumbled
    • 1/4 Cup Scallions, Sliced Thin
    • 1/4 Cup Green Bell Pepper, Diced
    • 2 Oz. Jar Pimiento, Drained
    • 1/2 Cup Reduced Fat Sharp Cheddar Cheese, Shredded

    Directions

    1. Slice potatoes in half, lengthwise. Scoop out center of potato to within 1/2-inch of potato skin.
    2. In medium-size bowl, combine eggs, bacon, green onion, green pepper, and pimiento.
    3. Spoon turkey mixture evenly into potato shells and sprinkle one tablespoon cheese over each shell.
    4. Bake 15-20 minutes at 350º.
