Turkey Bacon Quiche In Tatar Skins
Another great Sunday Brunch favorite or it would make a great appetizer for Game Night. Just thinly slice the potatoes, steam them in the microwave and line a muffin tin. Follow remaining instructions. Ingredients
- 4 Baking Potatoes, Baked & Slightly Cooled
- 4 Large Eggs
- 8 Slices Turkey Bacon, Cooked & Crumbled
- 1/4 Cup Scallions, Sliced Thin
- 1/4 Cup Green Bell Pepper, Diced
- 2 Oz. Jar Pimiento, Drained
- 1/2 Cup Reduced Fat Sharp Cheddar Cheese, Shredded
Directions
- Slice potatoes in half, lengthwise. Scoop out center of potato to within 1/2-inch of potato skin.
- In medium-size bowl, combine eggs, bacon, green onion, green pepper, and pimiento.
- Spoon turkey mixture evenly into potato shells and sprinkle one tablespoon cheese over each shell.
- Bake 15-20 minutes at 350º.
