    Ingredients

    • Carrots, sliced 2 lg
    • Heaping cup chopped onion 1
    • Juice of 1 large lemon 1
    • Matzoh meal 1/4 c
    • Orange juice 2/3 c
    • Pitted prunes 20 lg
    • Salt 1 ts
    • Sweet potatoes 2 lb
    • Tart apple, sliced 1 lg
    • cinnamon 1/4 To 1/2 tsp

    Directions

    1. chop half the sweet potatoes into small chunks. combine with the other
    2. ingredient except matzoh meal in a large casserole. grate other half
    3. of sweet potatoes, combine with matzoh meal, and pat mix into place
    4. on top of stuff in casserole. dot with cold margerine if desired
    5. (optional).
    6. bake covered 1 hr. bake uncovered 1 hr. (mollie omits the
    7. temperature, but it's not that crucial. 350F is fine.)
    8. cool and keep in fridge (covered) until ready to reheat for seder.
    9. add a little more orange juice if it looks kinda dry. it should not
    10. be soupy.
    11. serve with curry of choice and other sweet/spicy food. maybe an
    12. arugula salad would be nice (always is).
