Tomato Basil Soup
The dried basil is best for this recipe. It is delicious, heary and creamy - perfect with a cheesy panini! Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, chopped
- 2 14.5 ounces canned diced tomatoes, fire-roasted if available w/ jalapenos if available
- 2 cups Water
- Enough chicken broth seasoning for 3-4 cups broth
- 1 tablespoon DRIED basil
- 1/4 teaspoon crushed red pepper flakes (omit if jalapenos in tomatoes)
- salt and pepper to taste
- 1/2 cup half and half - more to taste
Directions
- Heat olive oil in a pot over medium high heat.
- Add onion and sauté for 3 minutes. Add garlic and sauté for 1 minute.
- Add tomatoes, basil, water and seasonings and bring to a boil.
- Reduce to simmer, and let simmer about 1/2 hour, to let flavor develop.
- Use an immersion blender or place mixture in a blender and blend until smooth.
- Stir in half and half.
- Return to pot, and slowly heat to desired temperature. Do not boil.
