Tomato And Avocado Pinwheel Salad
Ingredients
- 4 x Tomatoes, cut into wedges
- 2 x Avocadoes, peeled & pitted, cut into thin wedges
- 2 Tbsp. Lime juice
- 1/2 c. Balsamic vinegar
- 1 x Garlic clove, chopped
- 3 Tbsp. Onion, grated
- 1 Tbsp. Sweetener
- 1/4 c. Extra virgin olive oil
Directions
- Sprinkle tomato & avocado wedges with lime juice. On a serving platter, arrange laternate slices of tomato & aovcado in a pinwheel fashion.
- VINAIGRETTE: Whisk together vinegar, garlic, salt, onion & sweetener.
- Gradually pour in the oil & whisk to blend. Pour this vinaigrette over the wedges. Serve.
