  • To die for Meatloaf

    When I was growing up Meatloaf was really NOT my forte. I found several recipes and developed one of my own and my family loves it hope you do too. Tip; I took cookie cooling racks that I bought at the dollar store cut them to fit near the bottom of my loaf pans then lined my loaf pans with foil making small holes in the foil to drain grease/excess fat away from the meatloaf.

    Ingredients

    • 2 lbs ground Round
    • 1 lbs ground pork (breakfast sausage)
    • 4 cloves garlic minced
    • 1 1/2 cup chopped onions
    • 1 c thinly sliced celery
    • 2 c bread crumbs plain
    • 1/2 c flour
    • 1 tsp salt
    • 1 1/2 tsp Tony C.'s Cajun seasoning
    • 3/4 c shredded carrots
    • 1/4 tsp thyme
    • 1/4 c parsley flakes
    • 1/4 tsp black pepper
    • 1 egg
    • 1 tsp Worcestershire sauce
    • 1/4 tsp sage
    • 2 tsp olive oil
    • Ketchup (optional)

    Directions

    1. Take Garlic (peeled), Onions (peeled), carrots (peeled), celery (cleaned) place these in a food processor till finely chopped or chop by hand which ever you prefer. Set aside.
    2. Place remaining ingredients in a large bowl mix by hand until mixed well. Add Garlic, onions, celery and carrots mix well. Top with ketchup if you prefer.
    3. Place in two loaf pans evenly. bake at 350 degrees for 45 minutes to one hour until meat pulls away from the sides of the pan.
