  • The Loaf And Jug Famous Apple Muffins

    Ingredients

    • 1/2 c. butter room temperature
    • 1/2 c. packed brown sugar
    • 3/4 c. granulated sugar
    • 2 x Large eggs
    • 5 1/4 c. buttermilk
    • 4 c. flour
    • 3 Tbsp. grnd cinnamon
    • 1 Tbsp. baking soda
    • 1/2 tsp salt
    • 2 c. peeled McIntosh apples (2 to 3 medium) sliced in 1/2-inch pcs
    •     Additional brown sugar to top muffins

    Directions

    1. With rubber spatula, cream butter and sugars by hand till fluffy. Add in Large eggs and cream; beat till fluffy. Blend in buttermilk.
    2. Add in flour, cinnamon, baking soda and salt. Mix till all lumps have dissolved; don't overmix. Add in apples. (Batter will be thicker than typical muffin batter.)
    3. Preheat oven to 375 degrees. Coat muffin c. measuring 3 inches across top and 2 inches across bottom (jumbo size) with non-stick vegetable cooking spray. Spoon batter into muffin c., filling to top. Top each muffin with brown sugar.
    4. Bake in preheated oven 20 to 25 min, or possibly till done.
    5. Makes 12 muffins.
