Thai Crab And Shrimp Soup (Gaeng Chud Kaopot Aun)
Ingredients
- 1 tsp peanut oil
- 5 x garlic cloves chopped
- 3 x shallots chopped
- 3 c. fish or possibly chicken stock
- 2 Tbsp. fish sauce - (if Nam Pla not available, use any oriental fish sauce)
- 1/4 lb crabmeat shells removed
- 1/4 lb shrimp shells removed
- 1 can creamed corn - (15 ounce)
- 1/2 tsp black peppercorns cracked
- 1 x egg beaten
- 2 Tbsp. minced cilantro
Directions
- In a large saucepan, saute/fry the garlic and shallots in the oil till they are light brown. Add in the stock, fish sauce, crab, shrimp, corn, and black pepper. Bring to a boil, pour in the beaten egg, and stir to create egg strands. Boil for another minute, then ladle into soup bowls and top with a sprinkling of cilantro.
- Comments: Thick and rich, this soup from Thailand is sufficient as a meal; serve warm to 3 to 4 people.
