  • Thai Cabbage Salad

    Ingredients

    • for the dressing:
    • 1/2 c rice vinegar
    • 1/4 c soy sauce
    • 2 tbsp honey
    • 1 tbsp chile garlic sauce
    • 1 tsp sesame oil
    • 4 garlic cloves minced
    • 1-2 fresh serrano chilies, seeds and ribs removed, minced
    • 1/2 c veg oil
    • For the salad:
    • 1 head green cabbage thinly sliced
    • 3 med carrots, grated
    • 1 med cucumber finely diced
    • 1 lrge red bell pepper, finely diced
    • 5-6 green onions thinly sliced on a diagonal
    • 1/2 c finely chopped parsley leaves
    • 1 cup unsalted dry roasted peanuts, coarsely chopped
    • (I would use a mandolin and thinly julienne the cuc and bell pepper myself)

    Directions

    1. add all the dressing ingredients to a jar and shake vigorously
    2. add all the salad ingredients to a bowl except peanuts. sprinkle prior to serving
    3. good for potluck
    4. **add 2-3 pkgs ramen noodles, bottom of bowl, scrunched up and top with the coleslaw mix, then pour dressing over before tossing. Let sit for a bit so that noodles can absorb some of the dressing.
