Thai Cabbage Salad
from epicurious cookbook Ingredients
- for the dressing:
- 1/2 c rice vinegar
- 1/4 c soy sauce
- 2 tbsp honey
- 1 tbsp chile garlic sauce
- 1 tsp sesame oil
- 4 garlic cloves minced
- 1-2 fresh serrano chilies, seeds and ribs removed, minced
- 1/2 c veg oil
- For the salad:
- 1 head green cabbage thinly sliced
- 3 med carrots, grated
- 1 med cucumber finely diced
- 1 lrge red bell pepper, finely diced
- 5-6 green onions thinly sliced on a diagonal
- 1/2 c finely chopped parsley leaves
- 1 cup unsalted dry roasted peanuts, coarsely chopped
- (I would use a mandolin and thinly julienne the cuc and bell pepper myself)
Directions
- add all the dressing ingredients to a jar and shake vigorously
- add all the salad ingredients to a bowl except peanuts. sprinkle prior to serving
- good for potluck
- **add 2-3 pkgs ramen noodles, bottom of bowl, scrunched up and top with the coleslaw mix, then pour dressing over before tossing. Let sit for a bit so that noodles can absorb some of the dressing.
