Tex-Mex Beef Cavatappi
Tex-Mex Beef Cavatappi is a quick, easy and healthy low fat, low calories, low sugars, recipe. Diabetic and WeightWatchers friendly. Main ingredients include: extra-lean ground beef, pasta, salsa, corn, zucchini, and cheese for a delicious, spicy casserole. This is a great week night option for anytime of the year. Takes only (10) minutes to assemble and only (30) minutes total time. Makes (6) generously sized servings. Ingredients
- Non-stick cooking spray
- 1 lb extra-lean ground beef
- 1 (16 oz) jar thick & chunky salsa*,(See Note below)
- 1 zucchini, chopped
- 1 tsp chili powder
- 3 cups uncooked cavatappi pasta, (or any small shaped pasta)
- 1 can (11 oz) no-salt-added corn, drained
- 1 cup 2% milk shredded Cheddar cheese, divided
- 1 tbsp lime juice
- 1/4 cup chopped cilantro
- NOTE:*
- For spicier flavor: add 1 Tbsp mashed (canned chipotle peppers in adobo sauce with the salsa)
Directions
- Brown ground beef in a large skillet sprayed with cooking spray; drain. Stir in salsa, zucchini and chili powder; simmer over low heat 10 minutes, stirring occasionally. Meanwhile, cook pasta as directed on package.
- Stir corn and 1/2 cup cheese into meat mixture; cook 3 minutes or until cheese is melted, stirring frequently.
- Drain the pasta; place in a large bowl. Add meat mixture, lime juice and cilantro; mix lightly. Top with remaining cheese.
