    Ingredients

    • Ingredients for integral dough : 125g integral flour,
    • 1 teaspoon baking soda,
    • 100g grounded hazelnut
    • 80g grounded nuts
    • 1 egg
    • 1 half tea spoon grounded cinnamon
    • a little salt
    • 80g sugar
    • 150g cold butter
    • Ingredients for stuffing and decorations :
    • 100g quince jelly
    • 2 tablespoon lemon juice
    • 2 teaspoons Calvados (or rum)
    • 750g apples
    • 2 tablespoon sugar
    • 100 hacked nuts
    • 4 tablespoons currant jelly

    Directions

    1. 1.Mix the integral flour with baking soda,hazelnuts and grounded nuts:put all this on the plank,and make a little hole,in the middle.Put inside the egg,and,add cinnamon and salt.Strew sugar,also,on the edge of the hole,and add flakes of butter.
    2. 2.Knead the dough,with cold hands,to the outward of the internal.Wrap then.in the transparent foil,and,put it in the fridge for 45 minutes.
    3. 3.Smear with butter a a tart form (24 cm).Hea the oven at 180.On the plank,drag the dough a little bigger,than the form,then,put it in the form; raise a tall edge.
    4. 4.Mix the jelly with lemon juice and Calvados or rum.Wash the apples,pull on the stalk,and,cut them in round slices,very thin.This effect could be obtain,with a knife,or with a gater.Each of the apple slice,must be rolled over in the jelly mix,and,it would be let it to rest a little.Then,you distribute the slices on the dough.Cook the cake at 45 minutes.
    5. 5.Let it chill.For decorate,you melt the sugar,and,add nuts,let them caramelised.Put on the tart jelly,strew on top,caramelised nuts.
    6. Sprinkle the apple slices,with lemon juice,in this way they will keep the beautifull colour.
