Taro Root And Garlic Chive Latka
Ingredients
- 1 lb Taro root
- 2 Tbsp. Minced garlic chives
- 1 Tbsp. Minced ginger
- 1 x Egg white
- 1 Tbsp. Cornstarch
- 2 Tbsp. Extra virgin olive oil
- 2 Tbsp. Salmon roe
- 1 Tbsp. Lowfat sour cream
- 16 x Chive points for garnish
- Salt to taste
- Freshly-grnd black pepper to taste
Directions
- Peel taro root and grate over large holes of cheese grater. In a mixing bowl place shredded taro root, garlic chives, ginger, egg white and cornstarch. Mix and season to taste with salt and pepper. In a large skillet over medium heat, heat the extra virgin olive oil and sear 1 Tbsp. of taro mix, flatten as a pancake. Cook each side till golden.
- Drain excess oil on a paper towel. Serve topped with salmon roe, lowfat sour cream and chive points.
- This recipe yields 4 servings.
