  • Tapioca Cake

    I had some frozen tapioca and I decided to make a cake out of it. It is very common among Malaysians to eat this type of cake that is also known as Kuih Bingka. The usual recipe calls for at least 1 lb or more tapioca but I made do with watever tapioca I had. The turn out was not too bad but I must confess that it does not have the traditional Kuih Bingka's looks..

    Ingredients

    • 350g frozen tapioca
    • 3/4 cup sugar
    • Pinch of salt
    • 1 cup thick coconut milk
    • 1 1/2 tbsp plain flour
    • 1/2 tsp baking powder
    • 1 egg
    • 1 tbsp butter and some extra for greasing

    Directions

    1. Wash the tapioca till the water is clear and blend it (or grate).
    2. In a large pot/bowl, melt the butter and add the rest of the ingredients (including the tapioca) and mix well.
    3. Pour the mixture in a greased baking tray and bake at 170 degrees for about 45 minutes or till the surface is dried.
    4. Serve cool at room temperature
