    Quick and easy Taco Salads!

    Ingredients

    • 12-18 corn tortilla chips
    • 1 pound ground beef
    • 1 (1.25-ounce) envelope 40% Less Sodium Taco Seasoning Mix
    • 1/2 cup water
    • 4 cups assorted lettuce, torn into bite-size pieces
    • 1/2 cup shredded Cheddar cheese or Mexican blend
    • 1 tomato, coarsely chopped
    • 1/4 cup sliced black olives
    • Salsa

    Directions

    1. In a large skillet, brown the ground beef; drain. Add taco seasoning mix and the water. Stir until the ground beef is coated with the seasoning mixture. Cook an additional 2 minutes or until the water has slightly evaporated and the sauce has thickened.
    2. Meanwhile, place the tortilla chips on two serving plates and top with the lettuce, tomatoes, and olives.
    3. Place the desired amount of taco meat on the very top of each salad and sprinkle with cheese.
    4. Spoon salsa over the salad and serve with condiments, such as sour cream, onions, or avocados.
