  • Sweet Yeast Dough For Sweet Rolls Andcoffee Cake

    Ingredients

    • 1/2 c. lukewarm water
    • 2 packages. yeast
    • 1/2 c. lowfat milk, scalded
    • 1/2 c. sugar
    • 2 teaspoon salt
    • 1/2 c. shortening
    • 2 large eggs, beaten
    • About 5 c. sifted plain flour

    Directions

    1. Dissolve yeast in lukewarm water. Add in sugar, salt and shortening to hot lowfat milk. Cool to lukewarm; then beat in large eggs. Add in 2 cups of flour and beat thoroughly. Stir in dissolved yeast. Add in just sufficient flour to make a soft dough. Turn onto floured surface; cover with bowl and let rest 10 min. Knead till smooth and satiny.Place in greased bowl and lightly grease top. Cover and let rise in warm place till light, about 1 1/2 hrs. When light, punch down and let rest for 10 min. Shape into rolls, coffee cakes, or possibly tea rings. Place on greased pans and lightly brush tops with oil. Cover and let rise till light, about 50 min.
    2. Bake at 350°F for 25 to 30 min for coffee cakes, 20 to 25 min for pan rolls 15 to 20 min for individual rolls.
