Sweet Potato Salad With Warm Bacon Dressing
Ingredients
- 6 slc bacon medium diced
- 1 x red onion finely sliced
- 3 x garlic cloves finely minced
- 3/4 c. white wine vinegar
- 1/2 c. extra virgin olive oil
- 2 Tbsp. granulated sugar
- 4 x sweet potatoes peeled, cooked,
- and cut into 1" dice, kept hot
- Salt to taste
- Freshly-grnd black pepper to taste
- 4 x green onions finely sliced
- 1/4 c. minced parsley
Directions
- Heat pan over high heat. Add in bacon and cook till just crisp. Remove bacon to a towel-lined plate. Pour off all but 2 Tbsp. of the fat.
- Add in onions and garlic and cook till soft. Remove pan from heat, add in vinegar, extra virgin olive oil, sugar and reserved bacon.
- Place the potatoes in a large bowl, pour the dressing over and season with salt and pepper. Mix in the green onions and parsley. Serve at room temperature.
- This recipe yields 8 servings.
