Sweet Potato & Black Bean-Jalapeno Soup

- One Sweet Potato, peeled, cubed
- one 15.5 ounce can Black Beans, drained
- One cup vegetable stock (low sodium)
- 1/2 cup beef broth
- one tablespoon Tomato Paste (I use from a tube)
- One Jalapeno pepper, sliced
- Chopped Cilantro for garnishing
- Several dollops of sour cream
- Handful of tortilla chips
Directions
- In a soup pot (lidded) add beef broth, tomato paste, vegetable stock, stir to mix on low heat, add sweet potato cubes, stir gently and cover. Cook 15 minutes on low/medium heat, remove lid add black beans and cover, cook 10 additional minutes.
- Ladle into soup bowls, add cilantro, Jalapeno pepper slices, sour cream, tortilla chips
- Enjoy!
