    Sweet n' Sour Scallops

    Ingredients

    • 8 ounces Sea Scallops
    • one 5-ounce can pineapple chunks with natural juices
    • One Lemon (juice only)
    • 1 cup cook wild rice
    • 1/2 cup halved cherry tomatoes
    • 1 tablespoon almond slivers
    • 2 tablespoons low sodium soy sauce
    • 1 teaspoon grated ginger root
    • 2 tablespoons brown sugar
    • 1/4 scant cup vegetable stock (low sodium)
    • one teaspoon corn starch
    • freshly chopped parsely

    Directions

    1. In a saute pan add vegetable stock, brown sugar, stir well, add ginger root, soy sauce, pineapple chunks, corn starch and cook 3-4 minutes on medium heat, add Sea Scallops, lemon juice and stir gently saute 6 minutes.
    2. Add cooked rice to a plate in the center, add cherry tomatoes, add saute pan ingredients, garnish with almond slivers and freshly chopped parsley.
    3. Enjoy!
