Sweet n' Sour Scallops
Delicious supper entrée any night! Ingredients
- 8 ounces Sea Scallops
- one 5-ounce can pineapple chunks with natural juices
- One Lemon (juice only)
- 1 cup cook wild rice
- 1/2 cup halved cherry tomatoes
- 1 tablespoon almond slivers
- 2 tablespoons low sodium soy sauce
- 1 teaspoon grated ginger root
- 2 tablespoons brown sugar
- 1/4 scant cup vegetable stock (low sodium)
- one teaspoon corn starch
- freshly chopped parsely
Directions
- In a saute pan add vegetable stock, brown sugar, stir well, add ginger root, soy sauce, pineapple chunks, corn starch and cook 3-4 minutes on medium heat, add Sea Scallops, lemon juice and stir gently saute 6 minutes.
- Add cooked rice to a plate in the center, add cherry tomatoes, add saute pan ingredients, garnish with almond slivers and freshly chopped parsley.
