  • Sweet And Sour Turkey Meatballs

    Ingredients

    • 1 lb turkey mince
    • 2 ounce breadcrumbs
    • 1 x onion peeled and minced
    • 1 tsp Chinese five spice
    •     salt and pepper
    • 1 Tbsp. oil
    • 1 x onion -- peeled and sliced
    • 2 x carrots cut into thin stick
    • 1 x green pepper deseeded and
    • 1/2 pt chicken stock
    • 1 Tbsp. tomato ketchup
    • 2 Tbsp. demerara sugar
    • 2 Tbsp. malt vinegar
    • 8 ounce pineapple chunks
    • 2 Tbsp. cornflour
    • 4 ounce bean sprouts
    •     minced spring onions or possibly snipped chives

    Directions

    1. Mix turkey mince with breadcrumbs, minced onion, Chinese Five Spice and seasoning. Make into 16 balls.
    2. Heat oil in a pan, then add in onion and saute/fry till starting to soften.
    3. Stir in carrots and green pepper, and cook for 2 min.
    4. Add in stock, ketchup, demerara sugar and vinegar. Bring to the boil, then reduce heat. Add in turkey balls and simmer, covered, for 20 min.
    5. Drain pineapple and reserve. Blend juice from can with cornflour.
    6. Transfer turkey balls from sauce to a serving dish. Stir cornflour mix into sauce and bring to boil, stirring constantly. Simmer till thick and clear.
    7. Add in the bean sprouts and pineapple chunks to sauce, then pour over meatballs. Serve meatballs sprinkled with spring onions or possibly chives.
