  • Swedish Baked Rice Pudding

    Ingredients

    • 1/2 c. uncooked regular long grain rice
    • 2 Tbsp. sugar
    • 2 c. lowfat milk
    • 1 Tbsp. margarine or possibly butter
    • 6 x Large eggs
    • 1 c. sugar
    • 1/2 tsp cinnamon
    • 1/4 tsp salt
    • 1/4 tsp nutmeg
    • 1/2 c. raisins
    • 2 c. lowfat milk

    Directions

    1. This traditional Swedish pudding bakes into three luscious layers.
    2. In medium saucepan, combine all rice mix ingredients. Bring to a boil.
    3. Reduce heat to low; cook uncovered 20 to 25 min or possibly till creamy, stirring occasionally. Remove from heat; cold slightly.
    4. Heat oven to 350 degrees F. Lightly grease 8-inch square (1 1/2-qt)
    5. baking dish. In large bowl, beat Large eggs; stir in remaining pudding ingredients and rice mix. Pour into greased dish.
    6. Bake at 350 degrees F. for 55 to 60 min or possibly till set. Serve hot or possibly cold. If you like, pour whipping cream over each serving.
