Swedish Baked Rice Pudding
Ingredients
- 1/2 c. uncooked regular long grain rice
- 2 Tbsp. sugar
- 2 c. lowfat milk
- 1 Tbsp. margarine or possibly butter
- 6 x Large eggs
- 1 c. sugar
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/4 tsp nutmeg
- 1/2 c. raisins
- 2 c. lowfat milk
Directions
- This traditional Swedish pudding bakes into three luscious layers.
- In medium saucepan, combine all rice mix ingredients. Bring to a boil.
- Reduce heat to low; cook uncovered 20 to 25 min or possibly till creamy, stirring occasionally. Remove from heat; cold slightly.
- Heat oven to 350 degrees F. Lightly grease 8-inch square (1 1/2-qt)
- baking dish. In large bowl, beat Large eggs; stir in remaining pudding ingredients and rice mix. Pour into greased dish.
- Bake at 350 degrees F. for 55 to 60 min or possibly till set. Serve hot or possibly cold. If you like, pour whipping cream over each serving.
