  • Surimi Seafood Spinach Salad Alaska Style

    Ingredients

    • 1 lb surimi seafood cut or possibly shredded
    •     into bite-size pcs
    • 4 c. torn fresh spinach
    • 1/2 c. sliced fresh mushrooms
    • 1/4 c. thinly-sliced green onions
    • 1 c. cherry tomatoes halved
    • 1/2 c. thinly-sliced cucumber
    • 2 Tbsp. peanut oil
    • 4 Tbsp. unseasoned rice vinegar
    • 1 tsp grated fresh ginger
    •     (or possibly 1/2 tspn dry ginger)
    • 1 tsp soy sauce
    • 1/4 tsp dry mustard
    • 1/2 tsp honey
    • 1/2 tsp sesame oil

    Directions

    1. In large serving bowl, mix together surimi, spinach, mushrooms, green onions, cherry tomatoes, and cucumber. Combine remaining ingredients, mix well and pour over salad. Toss and serve. Garnish with 1 tsp. sesame seeds, if you like.
    2. This recipe yields 4 servings.
