    Sunday Supper Smothered Pork Chops

    Based on a recipe from the old Irondale Cafe in Irondale, Alabama.

    Ingredients

    • 1 tbs. brown sugar
    • 1 tsp. salt
    • 1/2 tsp. pepper
    • 1/4 cup flour
    • 4 - 3/4 inch thick pork chops, bone-in
    • 4 slices bacon, cooked, chopped
    • bacon drippings
    • 1 medium onion, sliced thin
    • 1 medium bell pepper, seeded and sliced
    • 1 lemon, sliced and seeded
    • 1/2 tsp. dry thyme
    • 1/2 tbs chopped parsley
    • 1 1/2 cups chicken stock

    Directions

    1. Add the brown sugar, salt, and pepper to the flour.
    2. Dredge chops in flour.
    3. Cook bacon, remove, chop.
    4. Heat bacon drippings in the skillet and saute the onion and bell pepper for a few minutes, remove.
    5. Add the chops, brown on both sides.
    6. Add the lemon to the chops, along with the broth.
    7. Cover and simmer for 1 - 1 1/2 hours until chops are tender
