Sunday Supper Smothered Pork Chops

- 1 tbs. brown sugar
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/4 cup flour
- 4 - 3/4 inch thick pork chops, bone-in
- 4 slices bacon, cooked, chopped
- bacon drippings
- 1 medium onion, sliced thin
- 1 medium bell pepper, seeded and sliced
- 1 lemon, sliced and seeded
- 1/2 tsp. dry thyme
- 1/2 tbs chopped parsley
- 1 1/2 cups chicken stock
Directions
- Add the brown sugar, salt, and pepper to the flour.
- Dredge chops in flour.
- Cook bacon, remove, chop.
- Heat bacon drippings in the skillet and saute the onion and bell pepper for a few minutes, remove.
- Add the chops, brown on both sides.
- Add the lemon to the chops, along with the broth.
- Cover and simmer for 1 - 1 1/2 hours until chops are tender
