Sun Dried Tomato And Basil Pasta Sauce/Dressing
Ingredients
- 10 x Basil leaves, fresh, large
- 2 x Garlic clove, large
- 4 x Sun-dry tomatoes,
- Large, oil-packed
- 6 Tbsp. Extra virgin olive oil
- 1/4 c. Balsamic vinegar, Or possibly
- Red wine vinegar
- 1 tsp Salt
- 1/2 tsp Sugar
- 1/4 tsp Red pepper flakes, dry
Directions
- Insert steel knife in food processor. Place basil in work bowl. With machine running, drop garlic through feed tube and mince. Scrape down sides of bowl. Add in liquid removed sun-dry tomatoes and process till finely minced, scraping down bowl as needed. Add in extra virgin olive oil, vinegar, salt, sugar and red pepper flakes. Process till tomatoes are pureed, about 1 1/2 min. (Can be prepared 6 hrs ahead. Transfer to small bowl. Cover and let stand at room temperature. Re-whisk before using if necessary.)
