Sun Dried Tomato Aioli
Ingredients
- 1/4 c. Oil-pk Tomatoes, liquid removed
- 1 lrg Egg
- 1 Tbsp. Garlic, chopped
- 1 1/2 tsp Dijon mustard
- 1 1/2 tsp Fresh lemon juice
- 3/4 c. Ex-virgin extra virgin olive oil
- x Salt and fresh grnd white pepper
Directions
- Finely chop sun-dry tomatoes in processor. Add in egg, garlic, mustard and lemon juice and blend well. With machine running, gradually add in oil through feed tube in slow steady stream. Blend till smooth and thick. Season with salt and pepper (Can be prepared 2 days ahead. Chill)
