Sugar free Quinoa Pancakes
I use these for breakfast and snacks too. I serve with fruit purees. Ingredients
- 5 cups quinoa flour
- 1 cup tapioca flour
- 15 packets stevia
- 1 Tb. sea salt
- 1 tsp. baking soda or powder
- 3 cups water
- 2 eggs
- 3 Tb. nut butter (we use cashew, but this can be eliminated if needed)
- For a variation you can also add 3 Tb. lime juice instead of nut butter.
Directions
- Combine flours, salt, stevia, soda. Blend well.
- Add water and eggs. Mix with mixer.
- Melt nut butter and mix in last.
- Heat up griddle. Pour 1/3 cup per pancake. Usually after 2 or 3 bubbles it is ready to flip. Brown on both sides. Enjoy!
