  • Sugar Free Eggnog

    I love eggnog and all the choices this time of year make it very hard to not overindulge. I can remember many a breakfast as a teenager being a glass of eggnog and a cookie or two (okay, no judging). Now that I am an adult that constantly watches my weight and calorie intake especially this time of year, I wanted to find a lower calorie alternative to this favorite beverage. This recipe is a wonderful alternative. Put it in your favorite mug and enjoy!

    Ingredients

    • 1 package (1 ounce) sugar-free instant vanilla pudding mix
    • 5 cups nonfat milk
    • 1 teaspoon Stevia sweetener
    • 1/4 teaspoon ground cinnamon
    • 1/8 teaspoon nutmeg
    • 1 1/2 teaspoon rum flavored extract

    Directions

    1. In a large mixing bowl, mix the vanilla pudding, milk, sweetener, cinnamon, nutmeg and rum extract. Mix these ingredients well with a wire whisk for 2-3 minutes. If it becomes too thick, add a little more milk as needed, 1 tablespoon at a time. Taste test for sweetness. If you want it a little sweeter add another 1 teaspoon of sweetener. Chill well before serving. Makes 6 servings.
