Stuffed Zucchini
Ingredients
- 3 zucchinis
- 1/2 large onion, chopped fine
- 1 Tbsp butter
- 5 - 6 slices crispy bacon, chopped
- 1 Tbsp sour cream
- 1/4 to 1/2 tsp salt
- 1/4 tsp curry powder
- 1 roma tomato, seeded and chopped
- 1 tsp fresh thyme leaves
- freshly grated Parmesan cheese
- fresh cracked black pepper
Directions
- Wash zucchini. Slice in half. Scoop out middle leaving meat on sides of vegetable.
- Arrange zucchini in baking dish.
- Chop zucchini meat, sun dried tomatoes, onions.
- Saute onions in butter till translucent
- Add sun dried tomatoes.
- Season with salt, pepper and curry.
- Add sour cream and thyme leaves to zucchini meat.
- Add zucchini mixture to onion mixture.
- Stuff zucchini.
- Sprinkle with parmigiana and cracked pepper.
- Bake uncovered for 30 minutes.
