  • Stuffed Pepper Soup

    Ingredients

    • 1 LB Ground Beef-lean
    • 1/4 LB diced onions
    • 3 T olive oil
    • 2 QT beef stock
    • 2 T worchestershire sauce
    • 2 T ketchup
    • 1/2 cup-raw rice
    • 1 t each: oregano-basil-thyme-garlic-sugar-salt-black pepper
    • 1 cup diced tomatoes
    • 1/2 cup tomato paste or sauce

    Directions

    1. Saute onions in olive oil til translucent, add beef and cook til done.
    2. Break the beef into small pieces.
    3. Drain oil
    4. Bring to a boil-simmer until rice is cooked
    5. Add beef and onion
    6. Add 4 large (or to taste) diced green peppers (or red/green mixed peppers)
    7. Simmer 1/2 hour
    8. Add 1/2 cup parmesan cheese-simmer another 5 minutes
    9. Ad 1/2-3/4 cup mozzarella cheese (or Jack cheese) stir into soup so it does not settle to the bottom
    10. Adjust seasoning
