  • Stuffed Mushrooms

    This has been a family favorite of ours for generations - I've tweeked my own seasonings to taste!

    Ingredients

    • 1 Large Box of White Whole Mushrooms
    • 1 Large full head of fresh garlic
    • Pecorino Romano grated cheese
    • Italian seasoned bread crumbs
    • Fresh parsley
    • Oregano
    • Crushed Red Pepper flakes

    Directions

    1. Preheat oven to 450 degrees
    2. Clean mushrooms, but do NOT wet them - they hold water as it is - just clean them with a soft white cloth or paper towel - remove stems and chop the steps into small pieces
    3. In a bowl combine 1 1/2 cups of Italian seasoned bread crumbs, 1/2 cup of Pecorino Romano grated cheese, small handful of fresh parsley - chopped very fine, pinch of oregano, pinch of crushed red pepper flakes - as for the fresh garlic - I use about 5 -6 large cloves - chopped - you can decrease or increase to taste. Add the chopped mushroom stems into mixture and combine all ingredients very well.
    4. In a shallow baking pan, lightly grease the pan and place mushroom caps on pan - fill each cap to overflow a bit - drizzle a small amount of olive oil on top of each stuffed mushroom and put into oven. I bake at 450 degrees for approximately 10 minutes - or until lightly browned on top!
