Stuffed Eggplant
This is a nice entree and easy to cook Ingredients
- Four medium eggplant, one tblspn olive oil
- 2lbs ground beef
- grated paremesan cheese
- one medium onion diced
- 2-3 garlic cloves, diced
- Marinara Sauce
Directions
- Cut eggplant in 1/2, put aside,
- in large skillet pour two tblspns of olive oil
- Place onions and garlic into oil and saute, when onions are limp. Add meat to pan and sautee till brown. Just before you put the mixture into the eggplant halves pour sauce over the meat and let cook for five minutes. Put meat mixture into each half of the eggplant and sprinkle with Parmesan Cheese.Bake 375
