Stuffed Apples
Ingredients
- 6 McIntosh apples
- 1/2 lemon
- 4 tablespoons butter, softened
- 1 cup muesli cereal with dried fruit
- 2 tablespoons dark brown sugar
- 1/4 cup chopped walnuts
- 1 tablespoon orange zest
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1 pint French vanilla ice cream
Directions
- Pre-heat the oven to 425°F. Trim the top 1/4â1/2-inch off the apple and scoop out the center and seeds of each apple. Wipe the edges of the trimmed apple with the lemon to prevent discoloring. In a mixing bowl, combine the butter, cereal, brown sugar, nuts, orange zest, ginger and cinnamon. Fill the apples with the mixture.
- Set the apples upright in a medium casserole dish and bake for 20 minutes, until tender and bubbly. Place each apple in a serving dish, top with ice cream and serve hot.
