  • Strawberry Easter Cake

    Ingredients

    • 1/2 c. shortening
    • 1 c. sugar
    • 3 x Large eggs ( separated )
    • 2 c. sifted cake flour
    • 2 tsp baking pwdr
    • 1 x touch of salt
    • 2/3 c. lowfat milk
    • 2/3 tsp vanilla
    • 3 ounce package of strawberry Jello
    • 1/2 c. fresh strawberries
    • 3 ounce cream cheese
    • 1/2 box powdered sugar
    • 1 Tbsp. butter
    • 1 tsp vanilla

    Directions

    1. Beat all ingredients till smooth.
    2. Cream together, shortening, gradually adding sugar, the egg yolks, one at a time. Cream well.
    3. Sift together the flour, baking pwdr and salt.
    4. Add in alternately with the lowfat milk, add in vanilla and Jello. Beat the egg whites till stiff, and then fold them into your batter.
    5. Pour into two round cake pans.
    6. Bake in preheated 350 oven for about 25 to 30 min. Remove from pans and let cold.
    7. Spread 1/3 of the icing on one of the cakes and place the other on the top of it. Continue icing the cake. Place fresh Strawberries on the top of your cake.
    8. Deliciously moist cake enjoy.
    9. For Easter cake variation:1 c. of flaked coconut placed into a plastic bag add in two - three drops of green food coloring and shake. Place the coconut on top of the cake and place marshmallow chicks and bunnies all around it
    10. The Lighter Side;Substitute;May use Large eggs substitutes,fat free lowfat milk,Light Cream cheese, and margarine instead of butter.
