    Ingredients

    • 1 whole clean red lapu-lapu fish
    • salt and pepper to taste
    • 1 tsp of rum
    • 1 cup of water
    • 1 medium-sized onion, sliced
    • 1 pc red bell pepper, cut into strips
    • 1 thum-sized ginger
    • 1 stalk of celery, cut 1 inch diagonally
    • Sauce:
    • 1/4 cup butter
    • 2 cups of kangkong leaves
    • 1 cup of shredded mango
    • 1 stalk of lemon grass, white portions only, cut into 1 inch
    • 1 250 ml all-purpose cream
    • salt and pepper to taste

    Directions

    1. Rub fish with salt and pepper and rum.
    2. Steam with remaining ingredients for about 20 minutes. Discard vegetables, then arrange fish on a platter reserving broth for later.
    3. Melt butter and saute kangkong, green mango and lemon grass until limp.
    4. Add in reserved broth and simmer for about two minutes. Cool and put in a blender until mixture is smooth.
    5. Slowly stir in cream and adjust seasonings. Pour over prepared fish.
