    Steak with sun-dried tomato and onion

    Ingredients

    • 2 tbs fresh parsley leaves, chopped
    • ½ tbs black pepper kernels, cracked
    • 300 g beef round steak (2 round steaks)
    • 2 tbs olive oil
    • A pinch of salt
    • 1 red onion (100 g), cut into thin wedges
    • 120 g sun-dried tomatoes
    • ½ tbs brown sugar (Demerara)
    • 2 tbs balsamic vinegar
    • 2 slices bread (wholegrain)
    • 1 clove garlic
    • 1 tbs olive oil for the bread

    Directions

    Cut all visible fat from steaks and flatten them with meat mallet. Press parsley and cracked pepper into beef, let stand for 20 - 30 minutes.

    Meanwhile, reconstitute sun-dried tomatoes: soak them in warm water for 30 minutes until soft and pliable, then drain.

    Cook steaks in hot grill pan brushed with ½ tablespoon oil over high heat for 2 - 3 minutes each side until cooked to your liking. Season with salt and transfer to a plate, cover to keep warm.

    Add onion to another pan and cook in the remaining oil for 8 - 10 minutes or until softened. Chop the reconstituted sun-dried tomatoes in food processor and add to the pan. Sprinkle with sugar and balsamic vinegar. Toss until tomatoes are heated through. Set aside.
    5.
    Smear each slice of bread with garlic clove, sprinkle with olive oil and toast both sides for 1 minute in a hot grill pan.
    6.
    Place an equal amount of the tomato and onion mixture on each slice of toasted bread, top with the steak and serve with a salad of your choice.
