Squash Patties
Ingredients
- 6 to 10 yellow squash, grated
- 1 med. onion
- 1 1/2 T salt
- 1 c. self-rising flour
- 1/2 c. cornmeal
- Pepper to taste
- 1 egg
- 1 c. grated Cheddar cheese (optional)
Directions
- Place grated squash and onion in a colander and sprinkle them with salt. Let set over sink till all the moisture is gone. Add in flour, cornmeal, pepper, cheese, and egg; mix together. Form into patties and fry. Serves 8 to 10.
