  • Spinache Orange Bread (with) Frosting

    This is a snack my favorite aunt made for me and my family when we visited. I'm going to put up her version, right from her recipe book, then later put up a low fat converted version for the health conscious out there (like me!),

    Ingredients

    • ~Spinach Orange Bread Ingredients~
    • 1 - 10 ounce bag Frozen Spinach, thawed and drained
    • 1/2 Medium Orange
    • 11/2 cup Sugar
    • 3 extra large eggs
    • 3 cups Flour
    • 1 cup Vegetable Oil
    • 1 teaspoon salt
    • 1 teaspoon Baking Soda
    • 1/2 teaspoon Baking Powder
    • 1/4 teaspoon Nutmeg
    • 1/4 teaspoon cinnamon
    • ~Frosting Ingredients~
    • 1 package Cream Cheese (room temperature)
    • 2 tablespoons Orange Juice
    • 1/2 cup Powdered Sugar
    • 1/8 cup Orange Zest

    Directions

    1.
    Grind orange peel and pulp in processor (or blender).
    2.
    Combine with drained Spinach.
    3.
    Beat eggs in large bowl, adding sugar and oil.
    4.
    Mix well. Add prepared spinach and orange, blend lightly.
    Sift together dry ingredients and lightly blend with Spinach mixture.

    Pour into lightly greased loaf pan, bake at 350 degrees for 45-50 minutes.
    Frosting
    1.
    Combine cream cheese, orange juice, powdered sugar, and orange zest with hand mixer until the mixture is blended and slightly fluffy.
