  • Spinach Milanese With Fried Eggs

    Ingredients

    • 2 1/2 lbs fresh spinach
    • 3/4 c. grated Parmesan cheese
    • 6 large eggs
    • 1/2 c. butter, melted
    • salt and pepper, to taste.

    Directions

    1. Preheat oven to 375°F.Bring 1/4 cup of water to a rapid boil in a large frying pan.
    2. Wash spinach well in cold running water. Remove any heavy stalks.
    3. When water is boiling, add in spinach and cook for 7 min. Drain well. Wring dry in paper towels or possibly squeeze dry with cheesecloth. Set aside.
    4. Dry the frying pan that was used to cook spinach. In the same frying pan, heat 4 tbsp of butter. Sauté spinach in butter for several min over medium high heat (don't let butter begin to brown!).
    5. Grease an ovenproof casserole or possibly baking dish with 1 tbsp butter. Transfer spinach to baking dish. Sprinkle evenly with Parmesan cheese. Heat remaining butter and pour over spinach. Bake in oven at 375F. When cheese has thoroughly melted, remove from oven.
    6. Meanwhile, sauté the large eggs. Serve with the spinach on a heated serving dish.
    7. Serves 3, 2 large eggs for each serving.
